Every Friday is a good excuse to crush some Mexican beer and tacos. But today it’s not only the kick-off to the weekend but it’s also Cinco de Mayo, a holiday that might not mean much in Mexico, but has become a widely-accepted excuse to celebrate the Mexican and New Mexican culture more than usual at the end of this crazy week.

Roasted Corn Avocado Dip with Tri-colored Tortilla Chips.

Chile and Cerveza Braised Pork Butt served with rice.

Pollo Fundido with a chipotle cream cheese sauce, served with rice, pico and shredded lettuce.

Mole Chicken Enchiladas topped with queso fresco and a Mexican cream sauce served with rice.

Taco Dorados, fried rolled chicken tacos paired with a spicy chicken broth, topped with green cabbage, tomato, cotija cheese and tomatillo salsa.

Chipotle Chicken Chalupas with tomatillo salsa and cotija cheese served with a cup of black beans.

Carnita Tacos with blackened tomato salsa, cilantro, green cabbage and pico de gallo served with a cup of black beans.

Rajas con salsa crema, roasted poblanos in a cream sauce and baked with a blend of cheddar and jack cheeses, served with rice.
